After enough kitchen tables you start to notice that the question somebody opens with is almost never the one that they actually care about. They will ask me about tile or about timelines, and then walk me out to the door and say the real thing on the way, usually some version of how do I know that I am not being taken advantage of here. That question used to come at the very end of my visits. Now I bring it up myself in the first ten minutes, because waiting around for somebody else to ask it first has never once helped anyone.
So I try to answer the things that people are usually too polite to ask me directly. Why this costs what it costs. What the number would look like if we did less than what we are talking about right now. Whether the guy who quoted you lower is cutting something you would care about, or something that you genuinely would not. I am not trying to talk anybody out of hiring a competitor. I am trying to make sure that whoever you do end up hiring, you understood the decision you were making. Most people relax once somebody finally says the quiet part out loud first.

I will tell you what a cheaper quote is probably leaving out, including the times it is leaving out something you do not need.
Understand it, then hire anyone
My job is making sure you understood the decision. If you understood it and still went elsewhere, that is a fine outcome.
